I wanted to find something nutritious and filling for lunch -- and decided to do some searching on the intranet for brown rice and veggies (I read that all the celebs convert to brown rice and veggies when they have to lose weight for a big event). Here's what I came up with...
1 1/2 c. cooked brown rice
1 c. black beans (rinsed)
1 red pepper chopped
2 T. diced red onion
8 grape tomatoes halved
1/2 avocado
cubed mango
chopped cilantro to taste
Honey/Lime/Ginger Dressing
2 T. Vegetable Oil
2 T. honey
1 T. minced ginger root
Juice of one lime
Whisk to combine
Mix it all up and YUM! Healthy nutritious celebrity losing weight lunch!
